Loaded Sweetcorn Fritters

Golden, crisp-edged fritters with a whisper of smoked paprika, layered with cool sour cream, savoury bacon, sweet-tangy chutney, and a perfectly soft egg that brings the whole situation together beautifully.

Ingredients

  • 1 can creamed corn, lightly drained
  • 3 spring onions, finely sliced
  • 2 tablespoons flat-leaf parsley, finely chopped
  • 5 tablespoons cornflour
  • 2 tablespoons plain flour
  • 1 teaspoon baking powder
  • 5 eggs, divided
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper, to taste
  • ½ teaspoon smoked paprika
  • ¼ cup canola oil, plus a little extra if needed
  • ½ cup sour cream
  • 6 slices back bacon
  • ½ cup tomato chutney

Instructions

  1. Preheat the oven to 400°F (200°C). Lay the bacon slices on a lined baking tray in a single layer and bake for 12 to 18 minutes until lightly crisped at the edges and warmed through. Transfer to kitchen paper to drain, then tear or chop into bite-sized pieces.
  2. Lightly drain the creamed corn in a sieve for a minute or two to remove excess liquid, then transfer it to a bowl. Add the spring onions, parsley, cornflour, plain flour, baking powder, 1 egg, kosher salt, black pepper, and smoked paprika, and mix until you have a thick, spoonable batter. Let it sit for 5 to 10 minutes to firm up slightly.
  3. Bring a saucepan of water to a gentle simmer and add a small splash of vinegar. Crack each egg into a small bowl, then gently slide into the water. Poach for about 3 minutes until the whites are set and the yolks remain soft. Remove with a slotted spoon and drain briefly on kitchen paper.
  4. Heat the canola oil in a large frying pan over medium-high heat until shimmering. Drop heaped spoonfuls of the fritter batter into the pan, gently flattening into rounds. Cook for 2 to 3 minutes on each side until deeply golden and crisp at the edges, adjusting the heat as needed. Transfer to a plate lined with kitchen paper and repeat with the remaining batter, adding a little more oil if needed between batches.
  5. To serve, arrange the fritters warm on plates. Top with a generous dollop of sour cream, a scattering of bacon, and a spoonful of tomato chutney. Finish each portion with a poached egg and a light grind of black pepper.
