Golden Shawarma Hummus

Golden shawarma-spiced chickpeas over rich hummus with tahini, pickled onion, harissa, and crisp pita shards for warmth, crunch, and quiet depth.

Ingredients

  • 1 can (15 oz) chickpeas, drained and very well dried
  • 3 tablespoons extra virgin olive oil, divided
  • 1 tablespoon shawarma spice
  • 1¼ teaspoons kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon red wine vinegar
  • 1 teaspoon cane sugar
  • 1 small red onion, very finely sliced
  • 8 ounces hummus
  • 3 tablespoons tahini
  • 1 clove garlic, finely diced
  • 4 tablespoons warm water
  • 2 tablespoons harissa paste
  • 2 pita breads, torn into irregular pieces
  • 3 pita breads, toasted and cut into wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the chickpeas in a clean kitchen towel and dry them thoroughly. Transfer to a bowl and toss with 1 tablespoon of the olive oil, the shawarma spice, ½ teaspoon of the kosher salt, and the black pepper until evenly coated.
  3. Spread the chickpeas onto a baking sheet in a single layer. Roast for 20 to 25 minutes, shaking the tray halfway through, until deeply golden with a lightly crisp exterior and a soft centre. Set aside briefly.
  4. While the chickpeas roast, prepare the pickled red onion. In a small bowl, combine the red wine vinegar, the sugar, and ¼ teaspoon of the kosher salt. Add the sliced red onion and toss well. Let sit for at least 10 minutes, tossing once or twice, until lightly softened and bright.
  5. Prepare the crisp pita shards. Toss the torn pita pieces with 1 tablespoon of the olive oil and a pinch of the remaining kosher salt. Spread onto a baking sheet and bake for 8 to 10 minutes, until golden and crisp. Set aside.
  6. In a small bowl, prepare the tahini sauce. Whisk together the tahini and garlic. Add the warm water and continue whisking until smooth and pourable. Season with the remaining ½ teaspoon kosher salt.
  7. In another small bowl, stir together the harissa paste and the remaining 1 tablespoon olive oil until smooth and loosened slightly for drizzling.
  8. Place the hummus onto a serving plate and spread into an even layer, keeping it thick and rich.
  9. Spoon the warm chickpeas over the hummus, allowing some to settle into the surface.
  10. Drizzle the tahini sauce generously over the chickpeas.
  11. Scatter the pickled red onion across the top, letting a small amount of the pickling liquid follow.
  12. Drizzle the harissa mixture lightly over the dish. Finish with the crisp pita shards.
