Chicken Stock

Chicken stock made from whatever's left from a roast chicken with onion, carrot, celery, and garlic, slowly simmered into a rich, versatile base

Ingredients

  • 1 whole chicken carcass, including discarded offal and bones from eaten pieces
  • 1 onion, cut into chunks
  • 2 cloves garlic, roughly chopped
  • 2 stalks celery, cut into chunks, including leaves
  • 2 carrots, cut into chunks
  • water, to cover
  • 1 teaspoon kosher salt
  • any other vegetables or scraps you need to use or have collected, optional

Instructions

  1. Break the chicken carcass into smaller pieces and place in a large pot or Dutch oven. Add the onion, garlic, celery, and carrots. Pour in enough water to bring the level to about 85 percent of the pot’s capacity. Add the salt and stir briefly.
  2. Set the pot over medium-low heat and bring it up slowly. Avoid a full boil; if it starts bubbling aggressively, lower the heat to maintain a very gentle simmer.
  3. Cook for 3 to 4 hours, allowing the stock to develop gradually. If the liquid reduces too much, add a little water as needed to keep everything comfortably submerged.
  4. Strain out the solids and discard them. Let the stock cool completely, then transfer to the fridge or freezer for storage.

Notes

This is the kind of stock that works well with whatever you have on hand - use up vegetables that are starting to soften or need using, keeping in mind that strongly coloured ingredients will affect the final look of the stock.

A longer, gentler simmer will give you a cleaner, more balanced result. You can cook it faster at a higher heat, but the stock will be darker, slightly heavier, and carry more fat and impurities.

Store in the fridge for up to 3 days, or freeze for up to 3 months.
