Chickpea and Bean Gumbo

A deeply flavoured, slow-simmered vegetarian gumbo with a proper roux and just enough attitude.
Ingredients
- ¼ cup canola oil
- 4 tablespoons unsalted butter
- ½ cup all-purpose flour
- 1 onion, diced
- 1 green pepper, diced
- 3 stalks celery, diced
- 3 cloves garlic, minced
- 6 sprigs thyme
- 2 bay leaves
- 1½ tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1 can chickpeas, with liquid
- 1 can pinto beans or sugar beans, with liquid
- 2 cups vegetable stock
- 16 okra pods, sliced
- ½ teaspoon sugar
- 1 teaspoon white miso
- 1 teaspoon apple cider vinegar
- 1½ teaspoons kosher salt, plus more to taste
Instructions
- In a heavy-bottomed pot or Dutch oven, heat the canola oil and butter over medium heat until melted and gently shimmering. Add the flour and cook, stirring constantly, until the roux deepens to a rich brown colour, similar to dark chocolate. This will take 10 to 15 minutes. Keep the heat steady and do not step away.
- Add the onion, green pepper, and celery, stirring to coat thoroughly in the roux. Cook for 5 to 7 minutes until softened and lightly translucent.
- Add the garlic, thyme, bay leaves, Cajun seasoning, and smoked paprika. Stir and cook for 1 to 2 minutes, allowing the spices to bloom without scorching.
- Add the chickpeas and pinto beans along with their liquid, stirring to combine. Pour in the vegetable stock and stir well, scraping the base of the pot.
- Bring to a gentle simmer and cook for about 15 minutes, stirring occasionally.
- Add the sliced okra and the sugar, then continue to simmer for 20 to 30 minutes, stirring occasionally, until the gumbo thickens and settles into its final consistency.
- Remove from the heat. Stir a small amount of the hot gumbo into the miso to loosen it, then return it to the pot and stir to fully incorporate.
- Add the apple cider vinegar and stir well. Taste and adjust with additional salt if needed.
- Let the gumbo sit briefly before serving to allow the flavours to settle. Serve warm, ideally over rice or with something to scoop.
