This House Kale Salad turns a handful of everyday ingredients into something far more interesting, with crisp vegetables, plenty of Parmesan, crunchy breadcrumbs, and a bold anchovy Dijon dressing.

Ingredients

For the Salad
  • 4 cups kale, finely chopped
  • 1 carrot, diced
  • 2 ribs celery, diced
  • 2 spring onions, thinly sliced
  • 2 tablespoons fresh parsley, finely chopped
  • ¼ cup Parmesan, finely grated
  • ¼ cup Parmesan shavings, for serving
For the Dressing
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 anchovy fillet, mashed to a paste
  • 1 garlic clove, finely grated
  • ½ teaspoon honey
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons Parmesan cheese, finely grated
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper
For the Parmesan Breadcrumbs
  • ¼ cup fresh breadcrumbs
  • 1 teaspoon olive oil
  • 1 tablespoon Parmesan cheese, finely grated

Instructions

  1. In a large bowl, whisk together the Dijon mustard, white wine vinegar, anchovy, garlic, honey, olive oil, Parmesan, kosher salt, and black pepper until well combined.
  2. Add the kale and toss thoroughly to coat. Using clean hands, gently massage the dressing into the leaves for 30 seconds to 1 minute until the kale begins to soften slightly and darken in colour. Set aside for 10 to 15 minutes.
  3. Meanwhile, heat the olive oil for the breadcrumbs in a small skillet over medium heat. Add the breadcrumbs and cook, stirring frequently, until golden and crisp. Remove from the heat, stir through the Parmesan, and allow to cool.
  4. Add the carrot, celery, spring onions, parsley, and Parmesan to the kale. Toss until evenly combined.
  5. Transfer to a serving bowl or platter and finish with the Parmesan breadcrumbs and Parmesan shavings before serving.
