Japanese Steakhouse Fried Rice

Buttery, savoury, and dangerously easy to keep picking at straight from the pan, this Japanese steakhouse fried rice delivers all the comfort of a teppanyaki dinner without the flying utensils and public attention.

Ingredients

  • 1 cup jasmine rice
  • 1 tablespoon canola oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 spring onions, thinly sliced, white and green parts separated
  • 1 clove garlic, diced
  • 2 eggs, beaten
  • 1 cup frozen peas, thawed
  • 2 tablespoons soy sauce
  • 1 teaspoon mirin
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground white pepper
  • ½ teaspoon toasted sesame oil

Instructions

  1. Cook the rice according to the package instructions. Spread the cooked rice onto a tray or large plate and allow it to cool completely. For the best texture, refrigerate the rice for at least 1 hour, or overnight if possible.
  2. Heat a small nonstick pan over medium heat. Add a small drizzle of oil and cook the eggs, stirring and breaking them into small pieces as they set. Transfer to a plate.
  3. Heat the canola oil and butter in a large skillet or wok over medium-high heat. Add the onion and cook for 5 to 6 minutes, stirring occasionally, until softened and lightly golden.
  4. Add the white and light green parts of the spring onions along with the garlic and cook for 30 seconds, just until fragrant.
  5. Add the cold rice and use your spoon or spatula to break up any clumps. Stir-fry for 2 to 3 minutes until the rice is heated through and beginning to toast lightly.
  6. Add the peas, cooked egg, soy sauce, mirin, salt, and white pepper. Stir-fry for another 2 to 3 minutes until evenly combined and glossy.
  7. Remove from the heat and stir through the sesame oil and the dark green spring onion tops. Taste and adjust seasoning if needed.
