South African Malva Puddings with Cream Sauce

These individual South African malva puddings are baked until golden, then soaked with a warm vanilla cream sauce. Made with apricot jam and vanilla bean paste, they have the soft texture and rich flavour that have made malva pudding a favourite on South African tables for generations.

Ingredients

For the Pudding
  • 2 tablespoons butter, softened
  • 1 cup cane sugar
  • 4 tablespoons apricot jam
  • 1 egg
  • 1 cup whole milk
  • 2 tablespoons white wine vinegar
  • 2 teaspoons vanilla bean paste, or vanilla extract
  • 1 cup all-purpose flour (plain flour)
  • 1 teaspoon baking soda
  • ¾ teaspoon kosher salt
For the Sauce
  • 4 tablespoons butter
  • 1 cup heavy cream (fresh cream)
  • ½ cup cane sugar
  • 4 tablespoons water
  • 2 teaspoons vanilla bean paste, or vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C). Generously grease a 6-cup jumbo muffin tin.
  2. In a large mixing bowl, beat together the softened butter, brown cane sugar, apricot jam, and egg until smooth and slightly lighter in colour.
  3. In a measuring jug, whisk together the milk, white wine vinegar, and vanilla bean paste. In a separate bowl, stir together the flour, baking soda, and kosher salt.
  4. Add the flour mixture and milk mixture to the butter mixture in alternating additions, mixing until a smooth batter forms.
  5. Divide the batter evenly between the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 28 to 35 minutes, or until the puddings are golden brown and spring back lightly when pressed in the centre.
  7. While the puddings bake, prepare the cream sauce. Add the butter, heavy cream, brown cane sugar, water, and vanilla bean paste to a small saucepan. Bring to a gentle boil, stirring occasionally, then reduce the heat and simmer for 4 to 5 minutes, until lightly thickened and caramelised.
  8. Remove the puddings from the oven and let them stand for 2 minutes. Using a skewer, poke several holes over the top of each pudding.
  9. Slowly spoon about two-thirds of the warm sauce evenly over the puddings and let it soak in for 5 minutes. Spoon the remaining sauce over just before serving.
  10. Serve warm with extra cream sauce, softly whipped cream, vanilla ice cream, or custard.
