A jar of Sweet and Spicy Pepper Preserves is the kind of small kitchen victory that makes future meals infinitely better. Sweet peppers, a little heat, and a slow simmer transform everyday ingredients into a glossy condiment ready for cheese boards, sandwiches, grilled meats, and everything in between.

Ingredients

  • 2 pounds mixed sweet peppers, finely diced
  • 1 onion, diced
  • 4 cloves garlic, finely chopped
  • 1 jalapeño, finely chopped
  • 2 tablespoons olive oil
  • ⅔ cup sugar
  • ½ cup white wine vinegar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sherry
  • 1 teaspoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Heat the olive oil in a wide skillet or Dutch oven over medium heat. Add the peppers, onion, and kosher salt. Cook for 15 to 20 minutes, stirring occasionally, until the vegetables have softened and most of the moisture has cooked away.
  2. Add the garlic and jalapeño and cook for 2 minutes until fragrant. Stir in the Dijon mustard and smoked paprika.
  3. Add the sugar, white wine vinegar, apple cider vinegar, sherry, and black pepper. Bring to a gentle simmer and cook uncovered for 35 to 40 minutes, stirring occasionally, until the mixture is thick, glossy, and jam-like. Stir more frequently toward the end of cooking to prevent the sugars from catching.
  4. Taste and adjust seasoning if needed. Allow to cool completely before transferring to a jar and storing in the refrigerator.
  5. Makes about 2 cups
