Smoked Paprika Garlic Hamburgers

Smoked paprika garlic hamburgers layered with red onion, peppery rocket, and a sharp mayo mustard finish.

Ingredients

  • 1 pound ground beef (mince meat)
  • 4 anchovy fillets, very finely chopped
  • 1 red onion, ½ very finely diced, ½ sliced for toppings
  • 1 garlic clove, diced
  • 1 tablespoon ketchup
  • 2 tablespoons fine breadcrumbs
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 4 hamburger rolls
  • 2 cups rocket (arugula)
  • Optional: 4 slices aged cheddar

Instructions

  1. In a large bowl, combine the ground beef, anchovies, finely diced onion, and grated garlic. Gently mix to distribute without compacting the meat. Add the ketchup and mix lightly until incorporated.
  2. Sprinkle in the breadcrumbs, black pepper, and smoked paprika. Mix gently just until the mixture holds together when pressed. Avoid overworking. Divide into 4 equal portions and form into patties about ¾" (2 cm) thick. Press a shallow indentation into the center of each.
  3. Place the patties on a tray and refrigerate for at least 30 minutes to firm up.
  4. While the patties rest, stir together the mayonnaise and Dijon mustard in a small bowl and set aside.
  5. Heat a pan or grill over medium-high heat and lightly oil if needed. Toast the hamburger rolls until just warm and lightly crisp.
  6. Just before cooking, season both sides of the patties evenly with the kosher salt, then place them in the pan or on the grill. Cook for 3 to 4 minutes per side, depending on thickness and desired doneness. Do not press down on them while cooking.
  7. If using cheese, place a slice on each patty during the final minute of cooking and allow it to melt.
  8. To assemble, spread a thin layer of the mayo mustard on the bottom half of each roll. Add a generous handful of rocket, then place the burger on top.
  9. Top with sliced red onion. Spread a little more mayo mustard on the top half of the roll and close.
