Sweet heirloom tomatoes, peppery arugula, and Parmesan are tossed in a simple lemon vinaigrette and topped with crisp chive garlic croutons for a salad that feels both effortless and special.
Ingredients
For the Chive Garlic Croutons
- 2 cups cubed crusty bread
- 2 tablespoons olive oil
- 1 clove garlic, finely grated
- 1 tablespoon chives, finely chopped
- ¼ teaspoon kosher salt
For the Salad
- 1 large heirloom tomato, cut into wedges (or 2 small heirloom tomatoes)
- 2 cups arugula (rocket)
- 2 spring onions, thinly sliced
- ⅓ cup Parmesan shavings
For the Dressing
- ½ lemon, juiced
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon Dijon mustard
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Place the bread cubes in a bowl with the olive oil, garlic, chives, and salt. Toss well to coat. Spread onto a baking sheet and bake for 10 to 12 minutes, turning once, until golden and crisp. Allow to cool for 5 minutes.
- Whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper in a large bowl. Add the tomato wedges and spring onions and toss gently to coat.
- Add the arugula and Parmesan and toss once or twice, just enough to combine without bruising the leaves.
- Transfer to a serving platter or shallow bowl and scatter over the warm croutons just before serving.
