Spicy Sausage Rolls

Golden puff pastry wrapped around spicy Italian sausage, red onion, and thyme makes the sort of snack that mysteriously disappears before you’ve even sat down properly. These are excellent warm from the oven, dangerously good at room temperature, and exactly the sort of thing people hover around at parties pretending they are “just having one".


Serves 4 as a main snack spread, or around 6 on a grazing table.

Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, finely chopped
  • 6 sprigs fresh thyme, leaves picked
  • 1 package hot Italian sausage
  • ¼ cup breadcrumbs
  • 1 sheet puff pastry, thawed
  • 1 egg
  • 2 teaspoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped red onion and cook for 6 to 8 minutes until softened and lightly golden.
  3. Add the thyme leaves and cook for 1 minute more until fragrant. Remove from the heat and allow the mixture to cool completely.
  4. Remove the sausage meat from the casings and place it in a large mixing bowl. Discard the casings.
  5. Add the breadcrumbs along with the cooled onion and thyme mixture. Mix thoroughly until evenly combined.
  6. Lightly flour a work surface if needed, then roll out the puff pastry sheet slightly to smooth the folds. Cut the pastry in half lengthwise to create 2 long strips.
  7. Divide the sausage mixture in half and shape each portion into a long sausage log down the centre of each pastry strip.
  8. In a small bowl, whisk together the egg and milk to make an egg wash.
  9. Brush egg wash along one long edge of each pastry strip. Roll the pastry over the filling to enclose it completely, then press firmly to seal with the seam underneath.
  10. Cut each long roll into 8 pieces, or your preferred size, to make 16 sausage rolls total.
  11. Arrange the sausage rolls seam-side down on the prepared baking sheet. Brush the tops with the remaining egg wash. You may have a little egg wash left over, which can be quickly scrambled in a tiny pan while the sausage rolls bake.
  12. Bake for 30 minutes until the pastry is deeply golden and crisp and the sausage filling is fully cooked through.
  13. Allow to cool slightly before serving. Ideally long enough that nobody burns the roof of their mouth in their excitement.
